FOOD BLOG SERIES I: Curry
Good Old Curry
I am sure, we all have a dish or two that are passed down by your parents or grandparents. Some recipes, cooking methods may be similar but they are always different and special in their own way.
For me, my mum taught me how to cook many dishes and one of which was curry.
She always uses the same old curry mix, I got to learn a lot from her and I hope you would be able to learn a thing or two from this as well.

Here's how you can make delicious curry like what you have seen from above!
Items required:
- A pot, depending on how many servings.
*for a family of three to four, just a medium-sized pot like what is seen below would be more than enough
Ingredients required:
- 1 packet of A1 instant curry paste
- 1 packet of coconut milk (any size, depending on how you like your curry)
- 1 can of full cream carnation
- a bunch of curry leaves (plucked and washed)
- a bunch of lemongrasses
- chicken meat (can be wings or drums but up to your liking even breast or thigh may work too)
- a few potatoes
- a few tau pok (depending on size, a few would do)
- 1 to 2 cups of water depending on preferred thickness of curry.
First,
Prepare your ingredients, cut the tau pok and the lemongrass into small pieces, skin the potatoes, open the can, cut open the packet of instant curry and set it all aside.
It will look like the pictures shown.
| Make sure to skin the potatoes, soak them in water for a while to rinse afterwards. |
| Once done skinning and washing, simply chop them into small pieces. So that it can cook easier and also be of smaller bite-size. |
Second,
Prepare the pot, heat the pot up before putting any of the ingredients in.
We have to start cooking the ingredients all in the pot.
After adding all the ingredients, stir well and make sure it is boiling well. Adjust the temperature according but boiling it for 30 - 45 minutes at medium heat would be good.
Afterwards, lower heat and boil with the lid slightly closed until it thickens.
Stir well from time to time.
| Add the chopped and beaten lemongrasses and curry leaves into the pot and cook until the fragrance is released. |
| Add the chicken meat into the pot and cook. Add the instant curry paste and fry until it is well mixed and cooked. |
| Add the wet ingredients, Coconut milk, carnation full cream, 1 to 2 cups of water. |
| Stir to prevent from sticking or the bottom to be burnt. |
Third, enjoy the curry you have made! :)
